Abstract

The plant practice was held at the Camarines Sur Dairy Processing Plant. The student spent 240 hours in the plant where he experienced first hand the activities and routines in a dairy processing plant. The plant was established as part of the milk feeding program in Camarines Sur and designed for micro scale processing. The products they produce are: Fresh milk, chocolate milk, flavored milk products, pastillas, yogurt, kesong puti, milk o’ jel, and milk bar. During the duration of the plant practice, the student performed routine activities in the dairy plant which include packaging, microbiological testing of products, physico- chemical properties determination, processing, and sales. The plant practice enabled the student to face the most commonly encountered problems in a dairy plant, to learn the lessons from it, and give recommendations based on his SWOT analysis of the plant
