Abstract

The student trainee underwent Plant Practice at Red Ribbon Davao Satellite Commissary. Red Ribbon Bakeshop is an internationally acclaimed franchise which serves quality breads and pastries. He was assigned as part of the production crew as a Line Quality Control analyst for a span of 150 working hours. He was taught the tasks, roles and importance of a Quality Control analyst as well as part of the Quality assurance team. During the course of the practicum, the student-trainee was assigned to monitor coding, supervise production, uphold GMP?s and co-audit the plant. He was also introduced to the environment of industry work as compared to the teachings he underwent in the university. Problems during the plant practice included GMP violations, Product and machine malfunctions, reworking, underyielding, Loss of equipment and miscoding. Lessons were noted and teachings were considered at the end of the plant practice which was summarized within a Closing report submitted to the Plant Supervisors.
