Abstract

The plant practice was conducted at the Dairy Products and Technology Development Division (DPTTDD), Animal Science Cluster, College of Agriculture, University of the Philippines Los Baños, College, Laguna from November 2012 to March 2013 for a total of 150 hours. DPTDD is popularly known as Dairy Training Research Institute (DTRI). During the practicum, she was able to apply and experience her knowledge in food science. She was able to observe the overall process of plant production. These are receiving of raw materials, physico-chemical analysis, processing of milk products, packaging and labeling, and distribution to the consumers. Physico-chemical tests done are organoleptic test, lactometer test, clot-on-boiling (COB) test and titratable acidity test. Milk products made in the plant are fresh milk, chocolate milk, yogurt and cheese. Goats milk and milk-o-gel are occasionally made. Processing of these products uses equipment such as homogenizer, pasteurizer, mixer and filler. The student was able to gain knowledge and skills to be productive food technologist.
