Abstract

The practicum was conducted at Dairy Products and Technology Development Division (DPTDD) of the Animal and Dairy Science Cluster, University of the Philippines Los Baños (UPLB) for a period of 150 hours from February to April 2013. The Dairy Products and Technology Development Division (DPTDD) which is under the ADSC is responsible for the processing of milk from the farm into a variety of dairy products such as fresh milk, chocolate milk, yoghurt and white cheese. Throughout the training, the student was able to use the principles learned in the university to the actual food processing utility. She was able to perform different physico-chemical analyses to determine the quality of raw milk to be used before subjecting to the different processes and familiarize with the equipments used in the processing such as pasteurizers, homogenizer, filler and mixer. The student was able to assist in packaging the different dairy products like fresh milk and choco milk and participated in maintaining the plants cleanliness and sanitation. Problems encountered were addressed and recommendations were also given. Plant practice enhanced the skills of the student and gave her exposure in the actual operations in the food industry. The student learned to deal with different people and gained competence towards her future work as food technologist.
