Abstract

The plant practice was conducted at the Dairy Products and Technology Development Division of the Animal and Dairy Science Cluster, University of the Philippines, Los Baños College, Laguna from December 3, 2012 to February 8, 2013 for a period of 150 hours. The trainee was briefed about the plant rules and regulations and the tasks to be performed. The trainee was allowed to perform (under supervision) quality control and quality assurance tests. Quality control tests include inspection of raw materials especially raw milk. Physicochemical analyses of raw milk such as Clot-on-boiling test, Acidity test, Lactometer test and Methylene blue reduction test and sensory evaluation of finished products were also performed. All of these aim to produce safe and sound dairy products for the consumers. The activities allowed to trainee to achieve her objectives, one of which, is to apply all theoretical knowledge she learned from the University. The plant practice exposed the trainee to small-scale processes milk and dairy production. It helped gain hands-on experience in activities that are necessary for food safety and production. The training also exposed the trainee to possible working environment of a Food Technologist.
