Abstract

This study is a continuation of the work of Bonus and Lim (1975). Ten trials were performed to further determine the inocula potential from the sahod in both tuba and lambanog toddy collection. Three plating media, namely, tryptone glucose yeast extract agar (TGYA), tryptone glucose yeast extract bromoresol green actidione agar (TGYBGAA). -nd tryptone glucose yeast extract rose bengal streptomycin agar (TGYRBSA), were used. The TGYA produced the highest average microbial counts in rinse water from both tuba and toddy sahod, followed by TGYRBSA and the lowest by TGITCA.A. Rinse water from tuba sahod had higher average counts in TGYA and in TGYBGAA and lower counts in TGYRBSA than from toddy sahod. The highest inocula potential was found in tuba sahod than in toddy sahod. In both tuba and toddy sahod, yeasts and bacteria were present with the former predominating. The rinse water kraut the tuba sahod was brownish pink, had an average pH of 4.5 and a sediment of 5 ml/ 100 ml of rinse water/ sahod, while the rinse water from the toddy sahod was oyster white, had an average pH of 3.5 and a sediment of 25.3 ml/ 100 ml of rinse water/ sahod.
