Abstract

Abstract: The major plant practice was conducted at Katipunan ng Kooperatibang Maggagatas Integrated Cooperative (KKMI) dairy plant, Barangay Lamot II, Calauan, Laguna from April 23 to May 26, 2012. The cooperative has been in the dairy business for almost 23 years and counting. KKMI has steady membership of loyal cooperatives. They give the regular source of cow and carabao?s milk, thus milk products are processed daily. The plant has the capacity to process a maximum of 2,000 liters of milk a day. Average volume of raw milk received by the plant everyday is 1,600 liters. Raw milk is subjected to quality assessment which determine the milk grade. Grade A milk is allocated to liquid milk products like whole milk, low-fat milk, non-fat milk, half ?n half, chocomilk, carabao's milk and yoghurt. On the other hand, Grade B and C are used for the processing of soft white cheese. Whole milk receives the greatest allocation with 50.18% of the total volume of raw milk because it has a higher demand in the market today. KKMI has established regular and institutional customers that put orders on a daily basis. Processed milk products are subjected to quality control measures before marketing it in Metro Manila and nearby provinces carrying brand names Country Fresh and Gatas Pinoy. Country Fresh is used for their bottled milk products marketed in Metro Manila, whereas Gatas Pinoy is used for milk products packed in sachets marketed in the province.
