Abstract
The physical and chemical properties of eight honey sample from Central Luzon were determined based on a series of analyses outlined by the Codex Alimentarius Commission. The commission includes standards for the reducing sugar content, moisture content, diastase activity and hydroxymethylfurfural content. Among the eight samples, Hagonoy, San Fernando and Munoz were found to contain pollen grains. However, Hagonoy and San Fernando samples contained a higher number of pollen thus classified under cluster III. The predominant pollen identified were those belonging to family Compositae and Mimosaceae, while Leucaena leucocephala was identified as a secondary pollen for both Hagonoy and Munoz and as a minor pollen for San Fernando. The reducing sugar content for all honey samples averaged to 55.17%. Only Hagonoy and Munoz samples contained reducing sugar of at least 657. satisfying the recommended value, while Sa Fernando samples registered a value of 72.207.
