Abstract

The ascorbic acid (AsA) content, total phenolics (TotP), and antioxidant activity (AoA) in the young shoots of 52 Pigeon pea, Cajanus cajan (L.) Millsp. accessions at the Asian Vegetable Research and Development Center were evaluated. The AsA content (mg / 100 g FW) ranged from 116 — 241 mg / 100 g FW, variability in the mean AsA content among the different accessions were insignificant (p > 0.05). Total phenolics (mg chlorogenic acid / 100 g FW) ranged from 449 — 769, variability in mean TotP among the different countries were highly significant (p < 0.05). AoA (% activity relative to 10mM BHA) ranged from 83 — 108 %, variability in mean AoA among the different countries of origin were insignificant (p > 0.05).This indicates, to an extent that variability especially in total phenolic content among the Pigeon pea accessions' that may be attributed to genetic factors and less to several other factors. Correlation coefficients between AsA and AoA was weakly negative (-0.25713), however, insignificant (p > 0.05). Correlation between TotP and AoA was weakly positive (0.3720), and significant (p < 0.05). Correlation between AsA and TotP was moderate to strongly negative (-0.49996), and highly significant (p < 0.05; p = 0.0001). Based from the results, total phenolics, and ascorbic acid cannot account for the antioxidant activity in Pigeon pea. AsA content in the young shoots of two accessions of Pigeon pea (R20 TOT2495 and R27 TOT3151 both from the Philippines) was significantly (highly) affected (p < 0.05; p = 0.0001) by the different storage periods (Day 0, 1, 3, 5, 7). However, TotP and AoA as affected by the different storage periods were insignificant (p > 0.05). AsA content and TotP, of the two accessions of Pigeon pea (R28 TOT3152- Philippines, R36 TOT6099- Taiwan) as affected by different sampling times (8 AM, 11 AM, 2 PM, 5 PM) were insignificant (p > 0.05), thus indicating that the time of harvest does not affect AsA content, total phenolics in the young shoots of Pigeon pea. Contrastingly, antioxidant activity was significantly affected by different sampling times (p < 0.05). Other antioxidant substances may be present, which contribute to the significant changes in the antioxidant activity in the young shoots of Pigeon pea.
