Abstract

The major plant practice was conducted at the Katipunan ng mga Kooperatiba ng Maggatas, Ink. (KKMI) plant located at Brgy. Lamot II, Calauan, Laguna in May 2012. During the major practice, the student was able to gain knowledge about the different processing operations of a dairy plant. The student actively participated in all activities she was assigned to, starting from the milk reception, quality control work wherein she conducted a series of tests of both raw and processed milk in the laboratory such as organoleptic tests, physico-chemical tests, and microbiological tests. She was also able to observe milk processing and packaging activities. Based on what she observed and experienced, the student analyzed the strengths, weaknesses, opportunities and threats that is currently being faced by the dairy plant. She cited some of the problems she was able to observe in the dairy plant like high total bacterial count standard, Good Manufacturing Procedures that are not being followed, and distance of the farms from the dairy plant. Based from these problems that were observed, she gave the following recommendations: (1) Reduction of total bacterial count standard for raw milk from ≤ 200,000 cfu to ≤ 100,000 cfu, (2) strict implementation of GMP?s, and (3) proper milk handling during collection.
