Abstract

The practicum was conducted at Food and Nutrition Research Institute (FNRI) in Bicutan, Taguig City. FNRI is the principal research arm of the government in food and nutrition and is one of the research and development institutes of the Department of Science and Technology (DOST). The practicum lasted from April 16 to May 15 2012 for a total of 150 hours. Sensory and physicochemical analyses were conducted on FNRI-developed products. Food processing such as extrusion and milling were also done accompanied by product development. The trainee was also given lectures about food packaging and food safety. The plant practice provided the trainee with an understanding on different process operation of a processing plant. The intern learned new skills and developed self-confidence in accomplishing assigned tasks. She also acquired knowledge on other fields and had been exposed to technology-enhanced equipment used in the Institute. Moreover, the trainee had learned a lot on dealing with people. Some problems were addressed and recommendations were suggested. The internship heightened the trainee’s appreciation and visualization of the work of a food technologist in a food industry.
