Abstract

The plant practice was accomplished at Nissin-Universal Robina Corporation, a leading noodle manufacturing company in the Philippines, located at First Cavite Industrial Estate, Dasmariñas, Cavite for a total period of 240 hours from April 16 to May 14, 2012. The student was assigned in the Quality Assurance laboratory where she was able to inspect and analyze raw materials and packaging materials as well as in line samples to ensure the safety and wholesomeness of the product. Microbial analysis of raw materials and finished goods were performed. Proper documentation and implementation of good manufacturing practices (GMP) was thoroughly discussed by the Quality Assurance specialist. At the end of the plant practice, the student was able to improve her working and interpersonal skills, apply the theoretical learning acquires from the University, and gain hands-on experience in an actual food processing operation. The experience gained from the training prepared her for future work as a food technologist. Recommendations and suggestions that are based on the student’s observations of the company practices are stated.
