Abstract

The plant practice was completed at the XYZCO Food Corporation, Marikina City, and Metro Manila from April 16, 2012 to May 11, 2012 fora total of 150 hours. XYZCO Food Corporation is a commissary supplying fresh, semi-processed and processed fruits and vegetables to fast food companies and restaurants in the Metro Manila Area. The company is under the supervision of the Department of Agriculture through the Bureau of Plant Industry. The student was provided with the opportunity to practice theories and principles acquired from the university by being part of the Quality Assurance Department of the company. The theories of quality control and assurance as well as sensory and microbiological analysis were applied in order to produce consistent quality and safe products. The student was able to experience quality control and monitoring of actual processing scenarios from raw material sorting to final product distribution. In addition, the trainee grasped the importance of maintenance and sanitation in maximizing the efficiency of the plant. Problems were recognized during the plant practice and recommendations were prepared to help improve state of the plant.
