Abstract

The 150-hours Plant Practice was accomplished at Cabuyao Meat Processing Corporation (CMPC) at Brgy. Pulo, Cabuyao, Laguna Philippines from April 15 to May 12, 2009 under the supervision of Mr. Vincent Barundia. Cabuyao Meat Processing Corporation provides its local and international markets with the best and widest range of high quality and HALAL certified meat products. The objective of the plant training was to put into practice the knowledge gained from food science courses. The trainee was expected to enhance new skills and discover new techniques and gain social development within the food manufacturing plant. During the plant practice, the trainee was designated in three divisions of the plant: Processed Meat Division, Canned Meat Division, and Quality Assurance Department. The practicum hours were spent on inspection and monitoring of the quality of raw materials and product from the first step to the final product. The plant conditions that would ensure the product quality were also evaluated. The trainee was honed by the plant practice experience to be prepared for the career in food manufacturing industry.
