Abstract

The practicum was conducted at the food plant of Goldilocks Bakeshops Inc., Mandaluyong City, Philippines for approximately four weeks, completing 150 hours. The company is one of the leading pastry stores in the country. It also serves meals in its different fast food stores nationwide. The student worked as Quality Assurance Officer. The main tasks assigned to the student were in-line monitoring and analyses of physicochemical properties. Parameters such as salt content, moisture content, total soluble solids, titratable acidity and consistency where determined. The quality of work done was observed during in line monitoring. In in-line monitoring, calibration of weighing scales, and maintenance of the temperature of chillers and refrigerators were also made. The student learned the importance of working efficiently under pressure. It is very important to follow every plant’s protocol, for dealing with food should be done with great care and caution. Any danger or hazard to the health of consumer is at stake if foods being processed are not handled properly.
