Abstract

The food science and technology practicum was conducted at the Regional Standards and Testing Laboratory (RSTL) Department of Science and Technology (DOST) IV-A, Barangay Timugan, Los Baños, Laguna from May 8 to May 31, 2012 completing 150 hours. The RSTL has two divisions—the microbiology laboratory and the chemistry laboratory. In the microbiology laboratory, the trainee was given an orientation on the proper handling of equipment and glassware and the labelling of samples. She performed media preparations and assisted in the microbiological analyses of water and food samples. She was also taught the appropriate way of inoculating and plating. In the chemistry laboratory, the trainee assisted in the performance of different chemical analyses such as the biochemical oxygen demand (BOD), chemical oxygen demand (COD), total dissolved solids (TDS), total suspended solids (TSS), pH determination, oil and grease, atomic absorption spectrophotometry for metal analysis, crude protein determination using semi-micro Kjeldahl method, color test, and phosphorus analysis. She learned how to prepare specific reagents and seeds used in BOD. She was also instructed how to properly handle equipment and label samples. Aside from the technical aspects of the RSTL, she was taught the proper decorum and ethics while working inside the laboratory.
