Abstract

The practicum was conducted at Mofel’s Food International Corporation at Governor’s Drive, Langkaan I, Dasmariñas, Cavite from April 10- 27, 2012 for more than 150 hours under the Quality Assurance Department (QAD). The company has been manufacturing goods, exporting their products and providing service through toll packaging. The practicum mainly aims to apply theories and principles learned from the University to actual processing line and to gain hands-on experience in food manufacturing department. The trainee was also expected to be exposed to actual processing line as a chief source of experience and to learn the company’s operations in food processing and its quality control systems. The trainee was assigned to the entire four manufacturing divisions of the plant: Oriental Division, Juice Division, Canning Meat Division and Processed Meat Division. The trainee was able to conduct monitoring analyses throughout the production such as pH determination, °Brix and temperature monitoring and weight regulation. Also, the trainee conducted visual inspection and actual tear-down examination of cans. The trainee gained hands-on experiences on the manufacturing of the products of the company such as sausages, canned meat products, tetra pack juices and bottled oriental products.
