Abstract

The Food Science and Technology practicum was conducted at Zagu Foods Corporation located at 52 West Capitol Drive, Bo. Kapitolyo, Pasig City from April 23 to May 15, 2012. Zagu Foods Corporation produces powder mixes used in Zagu pearl shakes. The trainee was first assigned to the Quality Assurance laboratory where she performed different physico-chemical, sensory, and microbiological analyses. She also served as an in-line production QA staff where she was trained to perform different monitoring practices to ensure that the standards set by the company were met. As a part of her training she checked if Good Manufacturing Practices (GMPs) were strictly followed by every personnel. She was also assigned to the receiving section where she examined the quality of incoming raw materials. At the end of the plant practice, the trainee was able to apply the knowledge learned in the university and gained new techniques involved in maintaining the quality of the products manufactured by the company. This paper illustrates in detail the nature of the company as well as the different activities performed by the trainee. In addition, she also stated some problems that were encountered during her training as well as the recommended solutions for such problems.
