Abstract

The plant practice was carried out at Cabuyao Meat Processing Corporation (CMPC) in Brgy. Pulo, Cabuyao, Laguna from May 2012 – June 2012 for a period of 150 hours. CMPC is a subsidiary of Republic Flour Mills (RFM) Corporation. It manufactures assorted meat products. The trainee was assigned in the three different divisions under the Quality Assurance Department of the company namely: Test Kitchen/Sensory Laboratory, Chemistry Laboratory and Raw Materials and Receiving Section. The author conducted different activities in which she gained additional knowledge and techniques in sampling, sensory analysis and physicochemical analysis of meat products. The plant practice also familiarized the trainee on the different aspects of meat processing, specifically in the quality assurance of meat and meat products. Practical working experience, punctuality and proper working attitudes were developed by the trainee during the plant practice. Problems encountered, lessons learned and recommendations were stated.
