Abstract
Certain changes in the chemical constituents of coconut Water occurred during prolonged standing. Total solids, total sugars, reducing sugars, non-reducing sugars, and soluble nitrogenous substances of the supernatant liquid decreased in amount after four 'weeks. The amount of titratable acidity increased as a result of the breakdown of sugars. An increase in the love l of ammonia-amide nitrogen was also found.
