Abstract
An electrical conductivity method was developed for determining moisture in coconut meat. Stainless steel needle electrodes, which can be easily stuck into the coconut meat were used and found satisfactory. The relation between the percentage of moisture P and the specific electrical resistance R (ohms) over the range 2% to 48% was found be, log R = -9.2 x 10-2P ,L 5.05. Error is estimated to be no more than 4% moisture.
