Abstract
The cell wall, pectin, and the hemicellulose fractions of the coconut endosperm were found to contain 4%, 20%, and 20% urconic acid, respectively, at all stages of maturity. Temperature-programmed gas chroma-tographic analysis of the pectin fraction hydrolysate showed that the acid sugar present was D-galacturonic acid. HDLG analysis of the neutral sugars present in each cell wall traction indicated that mannose is the major sugar present in pectins while galactose and man-nose were present in the hemicellulose fraction. The amount of mannose in pectins, and the galactose in the hemicelluloses decreased as the nut matured, while the mannose in the hemicellulose fraction slightly increased.
