Abstract

The distribution of proteins among the anatomical parts of the corn kernel was determined on four local varieties of corn, namely, UPCA Var1, UPCA Var 2, UPCA Var 3 and UPCA Var. 2-opaque. The germ fraction of all the varieties studied contained appreciable amounts of proteins. The level of total protein was not reflected in the differences in the level of protein of the anatomical parts of the corn kernel. The protein fractions were not evenly distributed throughout the entire maize kernel. Albumin was the major protein fraction in the germ and its amount showed positive correlation with the total germ protein. Zein was largely confined in the endosperm and varied greatly in the different parts of the kernel. The relative properties of the protein fractions in the endosperm, germ and pericarp was found to be significantly by variety.
