Abstract
PECAOCO, CHRISTOPHER VILLANLTEVA, College of Agriculture-College of Arts and Sciences, University of the Philippines Los Bak's, April 2005. The effect of pasteurization on the fatty acid profile of milk from Murrah Buffalo (Bubalus bubalis) and Philippine Carabao-Murrah crossbred.

Milk samples were obtained from lactating pure Murrah Buffalo and Philippine Carabao-Murrah Crossbred. The milk was pasteurized at 70°C for 2 minutes, cooled and the fat was extracted using diethyl-ether, esterified and the fatty acids were determined by Gas-Liquid Chromatography. GLC analysis revealed that the fatty acid profile of milk from both animals was not affected by pasteurization.
