The testa from three coconut cultivars, namely: Laguna; San Ramon and Mestiza were isolated and analyzed for its carbohydrate composition.
Acid hydrolysis of the testa yielded higher percentage of sugars on 3% sulfuric acid treatment than with 5% sulfuric acid. Of the three cultivars, the highest total sugar content was obtained from San Ramon. The sample contains 10.39% total sugars. Mestiza and Laguna cultivars have 10.12% and 8.75% total sugars, respectively.
Gas-liquid chromatographic analysis of alditol acetate of the defatted sample showed that mannose is the major monosaccharide of the testa. On the average, it comprises 57.93% of all the sugars analysed. Other sugars present were glucose, xylose, arabinose and galactose.
