Coconut oil was hydrolyzed with immobilized lipase from Rhizopus sp. 11. Highest rate of hydrolysis ( 9.5 umolesFFA/min) at pH 6.0 ,40°C and incubation time of 60 minutes was observed. The free fatty acid released were recovered by extractive crystallization with urea and esterified for chromatographic analysis. Gas chromatographic analysis showed that only the medium chain length fatty acid in coconut oil namely; Caprylic (C8), Capric (C10) and Lauric (C11) was acted upon by the enzyme.
