Abstract
Chromatographic analysis of the amino acids in coconut water showed a gradual increase in the number of amino acids as the coconut matured.
Samples from three-month old coconuts had B detectable amino acids while those from fully matured coco-nuts showed a total of 17 amino acids. These are arginine, histidine, aspartic acid, serine, glutamic acid, proline, hydroxy-proline, tyrosine, cystine, lysine, glycine, alanine, valine, leucine, isoleucine, and f -amino butyric acid, the first eight being the first to form.
