The carbohydrate composition of Coco niño endo-sperm cell walls was determined at three different stages of nut maturity. The endosperm cell walls were disrupted and isolated using a Waring blender and Maaton-Gaulin nomogenizer in tee presence of 70A (v/v) etnanol and exhaustively washed with tee solvent. The isolated and dried cell walls were hydrolyzed with 5A (w/v) sulfuric acid at 15 psig (121°C) for two and a half nours at an acid-to-substrate ratio of 3/1 (v/w). The saccnarification values obtained were 36.72>6, 38.495, and 5b.19A for tne seven, eight and nine-month old endosperm, respectively. Tne saccharification value is tue ratio of the sugars produced after hydrolysis to tue initial dry weight of sample. Tne sugars present were found to consist of mannose, galactose and glucose.
