Astaxanthin was extracted from crab shells using the vegetable oil method and supercritical carbon dioxide extraction. Quantitative analysis of the astaxanthin-oil extract yielded a concentration of 14.04 mg astxanthin/100 g oil and a pigment recovery of 0.13 g astaxanthin/ g grab shell. Astaxanthin was extracted using supercritical CO, at 3300 psi pressure at 60°C. The astaxanthin-oil extracts stored at different temperatures namely 0.-5°C (refrigerated), 25o.-30o. C (ambient) and 40,45°C (elevated), in the presence and absence of light were found to be relatively stable during the eight week storage period. The oil extract that retained the highest concentration (11.16 mg/100g oil) was that stored at 0.-5°C in the absence of light while the sample stored at 40.-45°C had the lowest concentration (10.27 mg/100 g oil) in the presence of light. Statistical analysis showed that the variation in the concentration of astaxanthin may be attributed to length of storage, lighting conditions and temperature. The antioxidant activity (AOA) of astaxanthin was verified using the (3-carotene bleaching method and the AOA of the extracts were found to decrease with storage. Thin layer chromatography indicated the presence of mono- and diester astaxanthin on the pigmented oil extract while free astaxanthin and astaxanthin esters were present in SC-CO2, extract.
