Abstract

The plant practice was conducted at the Quality Assurance Department of Alaska Milk Corporation, San Pedro, Laguna from April 11 to May 19, 2011 for a period of 240 hours. The trainee was assigned to the two divisions of the department, the Quality systems and Central laboratory. The activities performed in the laboratory include inspection of raw materials such as oil analysis, routinary analyses such as determination of pH and water activity of milk products and preparation and standardization of reagents, and physico-chemical analyses of milk products such as the determination of sugar content by polarimetry, pH, solubility index, fats and solids content, bulk density, % fineness and scorched particle test. The activities allowed the trainee to apply the knowledge and skills acquired in the University. The plant practice also exposed the trainee to large-scale processes and milk production. It helped gain hands-on experience in activities that are necessary for food safety and production. The training experience exposed the trainee to the working environment of a food technologist.
