Abstract

The plant practice, which covered a period of 150 hours from May 9, 2011 to June 13, 2011, was conducted at Zenith Foods Corporation located at Carmelray Industrial Park I, Brgy. Canlubang, Calamba City, Laguna. The company manufactures a variety of food products such as Chicken Joy™, Jolly Spaghetti™ and Burger Yum™. The student trainee was assigned in the Quality Assurance Department and Manufacturing Department. The trainee, during her training in the Quality Assurance Department, performed various activities such as raw materials receiving, microbiological testing, physico-chemical analysis, and sensory evaluation that ensured the quality and safety of the products produced and manufactured in the processing plant of the company. The trainee was also educated with the Hazard Analysis Critical Control Point (HACCP) and the Good Manufacturing Practices (GMP) and their actual applications in the processing plant. A seminar on Good Manufacturing Practices and Safety Program of the company was also conducted to further provide the trainee with essential knowledge to become an effective food technologist in the future. The training of the student under the Manufacturing Department gave her the opportunity to visit the different manufacturing lines, such as Marination Line, Frozen Patty Line, Meat and Vegetable Preparation, and observe actual processing operations, analyze and evaluate processes, pieces of equipments used, tools, personnel and as well as the methods used in each manufacturing lines. The trainee learned the application and use of various food processing equipments and food analysis apparata which will serve as a background experience for her future career in the food industry. The trainee‘s experience in the processing plant as a food technologist served as a tool in improving her skill and performance in actual situations, has broaden her practical experience, knowledge and outlook as a BS Food Technology student.
