Abstract
The effects of 2-chloroethanephosphonic acid (Amchem 68-64) and "Prima Fresh" on the ripening, storage behavior and quality of "Lakatan' banana fruits were studied.
Amchem 68-64 treated fruits attained full color development about a week earlier than untreated ones. Respiration was induced, the climacteric being reached 5 days ahead of the controls. Treated fruits had better appearance, peeling quality and general consumer accept- ability.
Wax-coated fruits attained the climacteric peak two days later than the uncoated controls. The loss in weight of coated fruits was reduced by 25 to 40% depending on the thickness of the coating. "Prima Fresh" imparted a fresh glossy appearance throughout the storage period.
