Abstract
Pigments from Curcuma longa, Caesalpinia pulcherrima and Delonix regia were extracted in 50, 70 and 95% ethanol. The crude pigment extracts were subjected to light and dark storage for 15 days. The stability of the pigments were determined visually and spectrophotometric- ally. Result showed that in the pigments extracted from Caesalpinia pulcherrima all the treatment means were significantly different. Solvent concentration showed significant effect on the stability of pigments in Curcuma longa. All the treatments were insignificant with respect to the pigments in Delonix peria. The water content or water availability of the sol- vent showed the most pronounced effect on the stability of the pigments in C. pulcherrima and C. longa upon stan- ding.
