Abstract

The practicum was conducted at the Dairy Training and Research Institute (DTRI) of the College of Agriculture, University of the Philippines Los Baños, College, Laguna from November 2013 to January 2014. The trainee was assigned to the Quality Control Department in which different physicochemical analyses were performed to determine the quality of the raw milk before processing. These include Organoleptic Test, Acidity Test, Lactometer Test and Clot-On-Boiling (COB) test. In addition, the trainee was also able to gain hands-on experience in the production department specifically in the processing and packaging of different dairy products such as fresh milk, chocolate milk, yoghurt and white cheese, sanitizing the bottles used in packaging and maintaining cleanliness of the equipment and work area. Principles and theoretical knowledge acquired from the university were applied in the food industry. The practicum enhanced the skills of the trainee and gave her proper training on the techniques in handling the facilities and equipment used in the food processing plant. Exposure to the social and working environment helped the trainee develop work etiquettes in preparation for her future career in the food industry.
