Abstract

The plant practice was conducted at the Dairy Products and Technology Development Division, Animal and Dairy Sciences Cluster, College of Agriculture, UPLB, College, Laguna, which took place from April 2012 to May 2012 totaling 150 hours. The student performed quality testing of milk, white cheese and spreadable cheese processing, as well as fresh milk, low fat milk and chocolate milk packaging.Processing of other milk products such as heavy cream and yoghurt were observed. The operation of the different processing equipment such as the pasteurizer, filler, homogenizer, cream separator and impulse sealer were learned. During the training, sample tests such as acidity test, clot-on-boil test and lactometer test were conducted. The student also assisted in the cleaning of equipment after every processing operation. Some of the problems encountered were the scarcity of materials such as rubber gloves and hair nets, and the lack of generator. It is recommended that there should be a generator in case of power loss so as to avoid halting of processing. Also, there should be enough hairnets, rubber gloves and facemasks to ensure that proper sanitary practices are followed.
