Abstract

The practicum was conducted at the Dairy Training and Research Institute (DTRI), University of the Philippines Los Baños from November 12 to December 20, 2013. The whole practicum covered 161 hours of plant activities including milk sampling, pre-processing procedures, actual processing, packaging of dairy products and even cleaning of the dairy plant. Different laboratory techniques on milk quality testing like organoleptic test, acidity test, specific gravity test and clot-on-boiling test were performed by the student. The student learned about the actual manufacture of dairy products such as fresh milk, chocolate milk, yoghurt and white cheese. Theories and techniques learned from the university were able to apply. The student gained knowledge and insights on the operation of the dairy processing industry. It is significant for an institution like Dairy Training and Research Institute to maintain the quality of their products. Each step must be given full attention in order to have successful processing operations. In accordance with this, the problems encountered, lessons learned and recommendations were presented.
