Abstract

The practicum was conducted at Edward Keller Philippines Inc., located at Carmelray Industrial Park I, Canlubang, Calamba City, Laguna from April 2013 to May 2013. Established by Swiss entrepreneurs in the 1860s, Edward Keller Philippines Inc. is a food manufacturing company that manufactures various dry mixes, liquid products, sauces and seasonings. The trainee was assigned in Quality Control Laboratory which is divided into sections, namely, the (1) Physico-chemical Laboratory, (2) Product Application and Sensory Evaluation Laboratory and the (3) Microbiology Laboratory. The trainee was assigned to each section during the whole period of training. The Physico-chemical Laboratory is further divided into stations where analysts handle specific food materials and tests. The trainee was able to assist and conduct every test in this section. In the Product Application and Sensory Evaluation Laboratory, the trainee was able to learn about sensory evaluation by doing hands-on preparation of the samples. Some products were also tested if they conform to their intended use. The Microbiological Laboratory is one of the most important sections. The laboratory ensures that the company as a whole is free from microbiological hazards. The trainee gained additional knowledge on testing procedures and techniques and prepared him in his career as a future food technologist.
