Abstract

The practicum was conducted in the Quality, Environment and Safety Department at Coca-Cola Bottlers Philippines Inc. from April 15 to May 3, 2013. The company has been one of the major producers and distributors of soft drink in Region IV. It provides the student an opportunity to gain experience and apply the principles of food technology to actual plant operations. The student was assigned in the various divisions in the Quality, Environment and Safety Department to make sure that the quality produced goods complied with the different standards established by the company. Common analyses done in the QES department are total soluble solids test, gas volume test, sensory evaluation and microbiological test for every batch of goods produced. At the QES laboratory the student learned that products must undergo several tests before they are released to the market. The student also learned the importance of quality control to assure the uniformity of the products.
