Abstract

The plant practice was conducted at Franklin Baker Company of the Philippines San Pablo City, Laguna. Franklin Baker of the Philippines is one of the largest Philippine producers of dessicated and processed and value added coconut products. It produces a high quality and safe coconut products that meet market and customer requirements. The training covered 168 hours starting April 15 until May 10, 2013. The student was assigned in Quality Assurance Microbiological Department where he was exposed to different techniques in microbiological analysis. This helped the trainee to be aware of good laboratory practices observed in microbiological laboratory. The activities undertaken were preparation of samples and media, different plating techniques, handling of pure cultures, regulation of equipment and instruments qualifications, and microbial analysis of product, personnel and environment. These activities allowed the student to apply different principles and concepts learned in the University to the food industry. New techniques and exposure to new equipment gave the trainee an advantage as a food technologist.
