Abstract

A 20-day plant practice was conducted at XYZCO Foods Corporation, Marikina City from April 22 to May 14, 2013 for the fulfillment of the 150 hour requirement. XYZCO Foods Corporation mainly produces fresh-cut vegetables for established food companies such as Jollibee Foods Corporation, Tokyo-Tokyo, and many more. Fresh-cut vegetables are minimally processed, ready-to-use trimmed or peeled, or any cut parts of vegetables. Assigned as part of the Quality Assurance Department, the trainee learned about the good manufacturing practices of the company for the production of top quality fresh-cut vegetables. Daily monitoring of the personnel's compliance to the sanitary measures set was done. Inspection of different parameters affecting food quality (i.e. processing and storage temperature) and sensorial properties of finished products were conducted. Moreover, other sectors of the company's GMP were observed and upheld. During plant practice, the trainee was able to acquire supplementary techniques and information from the hands-on experience and exposure to the social working environment. Immersing in the real industry serves as a way to apply the theories and concepts learned in schools, and XYZCO Foods Corporation served not only that but as a mold for a better person, a better student, and a better food technologist.
