Abstract

The Food Science and Technology practicum was undertaken at the dairy plant of the Dairy Products and Technology Development Division (DPTDD), Animal and Dairy Science Cluster, College of Agriculture, University of the Philippines Los Baños from November 2013 until January 2014. The student was exposed to different manufacturing and quality control processes in the dairy plant which included cleaning and preparation of packaging materials, laboratory testing of raw milk and cleaning of the main processing area after production. The whole practicum experience helped the student gain additional knowledge and skills on the processes involved in the manufacture of milk and other milk products. Strict quality control was very crucial right from the receiving of the raw materials until the end of production. The right attitude towards work and her co-workers was inculcated in the mind of the student. Cleanliness and proper hygiene practices in the workplace must also be strictly observed in order to produce good quality products.
