Abstract

The practicum was conducted at the Dairy Training and Research Institute (DTRI) or now known as the Dairy Products and Technology Development Division, the Animal and Dairy Science Cluster from November 18, 2013 to January 13, 2014. The student participated in the activities of the Quality Control Department and in Production Department where she performed several tests such as the organoleptic test, acidity test, clot-on-boiling (COB) test and lactometer test to ensure the quality of the raw milk. The Production Department taught the student the principles of sanitizing work area and bottles used, processing of the raw milk and packaging it and allows her to perform these activities. The practicum provided the student the experience wherein the knowledge learned and skills developed from the university were applied. The practicum gave the student a valuable experience that would serve as guide for her future career as food technologist.
