Abstract

The plant practice was conducted at the Quality Assurance Department of Goldilocks Bakeshop, Inc. (GBSI) Cake Plant, Shaw Boulevard, Mandaluyong City from April 23 to May 24, 2013 for a total of 175 hours. The said plant is one of the three plants of GBSI which is responsible for the production of cakes and tray products sold throughout the Philippines and some parts of the world. During the practicum, the student was tasked to aid in the supervision of the whole process of making the plant products and also to perform duties in connection to physicochemical and sensory analyses of raw materials and finished goods. At the end of the practicum, the student was able to provide a link between the practices done in the plant and the principles taught in the University. Moreover, new techniques and skills in connection with the management of a food processing facility and interaction with different kind of people were acquired by the trainee.
