Abstract

The major practice was conducted at The Laguna Creamery, Inc., Bay, Laguna from April 15 to May 27, 2013. The plant was owned by the former senator Ramon Magsaysay Jr. and was manage by Mr. Oliver Costa. The plant was relatively new and just started its operation last December 2012. The plant process large volumes of milk and produce different milk products. The plant practice gave the student opportunity to experience different operations done in the dairy plant. She was assigned to do both processing and quality testing of milk. For the quality testing, she performed organoleptic tests, alcohol precipitation test, acidity tests and clot-on-boil test of the milk. She was also tasked to help in the collection of milk up to the packaging of the products. The student was able to apply the theoretical knowledge learned from school to apply various activities held in the dairy plant. At the end of the practicum, the student evaluated all activities participated in the dairy plant. A technical analysis of the plant operations was conducted to determine its strengths, weaknesses, opportunities and threats. Problems were identified and possible solutions were recommended.
