Abstract

The practicum was conducted at Hacienda Macalauan Incorporated at Calauan, Laguna for a total of 150 hours from April to May 2014. Hacienda Macalauan Incorporated is a dairy farm and producer of high quality and nutritious milk and various dairy products. During the trainee's brief stay in the company, she was assigned to different areas involving the duties and responsibility of a Quality Assurance Officer. She was introduced to different physicochemical testing of dairy products such as determinatiojn of pH, titratable acidity, total soluble solids, and proximate analysis of the milk. Also, the trainee acquired knowledge and skills on the microbiological analysis of different dairy products in the company. Moreover, she was also assigned in the Research and Development field where she had hands-on experience in formulating and developing dairy products. She was tasked to formulate a new flavoring of a milk tea. At the end of the training, she learned proper techniques, skills and knowledge on the analysis performed and handling of some equipment used in the Quality Assurance and Research and Development (QARD) laboratory. She had also applied to knowledge acquired in the University to the actual processing of dairy products. The training also develops her personality towards other employees and learned proper work ethics.
