Abstract

The practicum was conducted at the Application Technology Group of Nestlé Philippines, Inc. Cabuyao Factory, the core factory for infant nutrition in ASEAN. The practicum lasted May 11 to June 8, 2010 for a period of 150 hours. Prototype development and sensory evaluation were conducted for liquid and powdered milk. The trainee also assisted in an industrial batch run of powdered milk and taught the different process and operations of a milk processing plant. The practicum enabled the trainee to gain experience in the research and development aspect of milk production. The author also learned to deal with different people in a working environment or workplace. Observations and comments on the training were made and the problems encountered in the working environment and on the practices as well as reports on possible solutions and recommendations.
