Abstract

The Food Science and Technology practicum was conducted at the Dairy Products and Technology Development Division (DPTDD), Animal and Dairy Science Cluster, College of Agriculture, University of the Philippines Los Baños, covering 150 training hours from April-May 2009. The DPTDD is known for processing different dairy products like fresh milk, chocolate milk, „kesong-puti’ and ice cream to name a few. The trainee was assigned on the different areas in the plant Quality Assurance (QA), Quality Control (QC), Processing and Packaging, and Research and Development. The trainee learned the processing and packaging of different dairy products and performed different physico-chemical analyses and sensory evaluation of the finished product. During the practicum, the lesson and principles learned from the university was put to use. Also, the trainee gained new knowledge and hands-on experience that may be helpful for her future work.
