Abstract

The field practice was held at Bal Asia Inc. located at Brgy. Dayap, Calauan, Laguna from April 16, 2008 to May 19, 2008. The company is a manufacturer and supplier of powder mix ingredients, processed pre-cooked food and a variety of food ingredients. The company consists of five different departments consisting of Production, Engineering and PPIC; Finance; Personnel; Quality Control (QC), and Research andDevelopment (R&D). Each Department has its own tasks that would contribute to the development and improvement of the company's long-term mission which is to supply their customers with quality and cost-effective processes food ingredients that will make their customers competitive in the Philippines and global market. The Production Department is actually the center of all the processing operations in the plant. This includes operations such as Milling, Cooking, Drying, Batching, Mixing, Sifting and Packaging . Processing of Ground Nutmeg is done at the Milling Area were different operations procedures were experienced. Main procedures involved destoning milling, and sifting operation. Product quality is of course the main concern in processing. In doing so, an approval from the Quality Control (QC) department is accomplished. The final product is inspected in terms of the degree of fineness, uniformity of the particle size, and the absence of foreign materials. In every operation at the plant, product quality assurance is the main factor considered. The Quality Control (QC) Departments the one responsible in monitoring each processing operation of the products in order to achieve a high quality product. This Department sets standards in the inspection procedure to qualify the product's quality. Actually, the plant implemented a Good Manufacturing Practices (GMPs) top ensure that their products are safe, pure, and effective. These practices involved the manufacturing personnel, performance of the machines, and sanitation of the entire plant. The management of the solid waste as well as wastewater of the plant is also one of the concerns of the company. They practice the proper way of disposing or discharging these wastes which in effect could help prevent pollution to the environment. Composting and waste water treatment are few of the things that they use to do in order to achieve a clean environment inside and outside of the plant. During the field practice, the trainee encountered different problems and eventually suggested some recommendations on those problems. One is the modification on some areas at the plant such as the mixing area. The trainee also suggested some improvements in managing the raw materials as well as the final products. Also, she suggested giving on the regular inspection of the various machines to prevent delay of production. The field practice gave the trainee additional knowledge on the principles of food processing through observation and involvement on some operations. Also, through this experience, she developed her attitude of good companionship with different people. This experience also will later on serve as a stepping stone for her future career as an Agricultural Engineer.
