Abstract

The practicum was conducted at the Hacienda Macalauan Inc., Calauan, Laguna from April to May 2014 for a total of 150 hours. The company is a dairy farm which sells and breed cattle farm animals, and produces processed milk and various dairy products. During her brief stay in the company, she was exposed to the different processes involved in manufacturing milk products as well as the duties and responsibilities of a Quality Assurance Officer. The physico- chemical (pH, titratable acidity, total soluble solids, rezasurin test, fat content, water hardness among others) and microbiological analysis of the company?s products were also introduced. At the end of the training, the trainee acquired greater understanding on the proper operation of pieces of equipment for determination of the quality of some dairy products. Also, the trainee had hands-on experience in the Research and Development Laboratory where she developed flavoring for milk tea. She gained additional knowledge and information and had applied the acquired skills from the academe into actual processing involved in a dairy industry. She has also developed her personality and time managerial skills.
