Abstract

The plant practice was conducted at Franklin Baker Company of the Philippines (FBCoP), San Pablo City, Laguna, Philippines from April 14 to May 17, 2014. Franklin Baker Company is one of the largest global suppliers of desiccated coconut products. Currently, the company is also manufacturing a range of products including coconut concentrate, creamed coconut, coconut chips, coconut water and coconut water concentrate, virgin coconut oil, coconut flour, and organic coconut sugar. In the Philippines, FBCoP?s processing plants are located in San Pablo, Laguna, and Davao, Mindanao. During the practicum, the on-the-job trainee was assigned at the Microbiology Section of the Quality Assurance Department. Being assigned in the microbiology laboratory, the trainee was able to apply, in the actual workplace or laboratory setting, the knowledge the University has imparted. Activities such as microbial analysis of in-process materials, and finished products were done. A series of tests such as water testing, air quality testing, environmental swabs, hand swabs were also made in order to guarantee the safety of the food products manufactured by the company. The rigid training of the analysts is required in order to carry out analyses with accurate test results. However, the lack of time allotted for the practicum hindered the mastery of the procedure done in each of the analyses. Thus, it is recommended that more time be provided for plant practice.
